PARMESAN CITRUS BAKED SALMON

I used this recipe on trout and chicken (at different times). It was yummy.
I first tasted it on salmon at Sam's Club last Saturday.

Ingredients:

2 lbs fresh salmon
1/4 cup Mayonnaise
2 Tbl. Grated Parmesan Cheese
1 Tbl. Tone's Citrus Grill Seasoning
1/4 cup Pita Bites

PreHeat oven to 450*F
Crush Pita Bites
Cut filets into 4 oz. portions - pat dry
In small bowl, combine mayonnaise, grated cheese and seasoning. Mix well and set aside.
Place salmon on greased cookie sheet. Spread mixture evenly over fillets and sprinkle with crushed pita crackers.

Bake uncovered for 12-15 minutes.s Fillets should flake easily with a fork when done.

I would think you could use any cracker.
The trout was delicious. Carter thought it was salmon and he wanted to go to Bear Lake fishing.

Creamy Chicken Lasagna

This is a simple recipe my friend passed along to me and the family really enjoyed. The kids asked for seconds (which never happens)!

3 chicken breast halves
6 uncooked lasagna noodles
1 cube of chicken bullion
1/4 cup hot water
1 80z cream cheese, softened
2 cups shredded mozzarella cheese- divided
1 26 oz jar of your favorite spaghetti sauce

Bring a large pot of slightly salted water to a boil. Cook noodles for 8-10 min. Drain, rinse with cold water and set aside.

Shred cooked chicken

Preheat oven to 350. Dissolve bullion cube in hot water. In large bowl, mix chicken with bullion, cream cheese, and 1 cup of mozzarella cheese.

Spread 1/3 of spaghetti sauce in bottom of 9x9 dish. Cover with half the chicken mixture and top with 3 noodles; repeat. Top with remaining sauce, and sprinkle with remaining. cheese.

Bake for 45 minutes.
