Swedish Meatballs with Gravy

Swedish Meatballs with Gravy

2 Tbl. butter
1 onion, chopped

2 cups bread crumbs
3 cups beef broth
2 tsp. sugar
3 tsp. salt
1 tsp. pepper

3 + lbs. ground beef
1 + lbs. ground turkey
1 + lbs. ground pork

1.  Saute onion in butter
2.  Mix bread crumbs, broth, sugar, salt, pepper and onion in a large bowl.
3.  Add  beef, turkey and pork.  Mix well and form into balls (I use a 1 1/2" cookie scoop).
4.  Put meatballs into a crock pot.
5.  Pour gravy over the meatballs and cook on low for 2 hrs.

*NOTE

Meatball can be made ahead and frozen.  Save the drippings in the fridge and make the gravy the day you serve them.

GRAVY  2 Tbls butter
3 Tbls. dripping from pan
6 Tbls. flour
5 cups beef broth
2 - 2 1/2 cups half and half cream
Make gravy recipe 2 xs for 90 meatballs.

1.  Melt butter and grease in sauce pan.  Gradually stir in flour to make a thick paste.
2.  Add beef broth and bring to a boil.  Cook 2 minutes.  Reduce heat and add the cream.  Cook another 3 minutes.  Pour over the meatballs.

Serve over mashed potatoes and lingonberries (optional.

Makes about 90 meatballs.
